The grapes are harvested by hand and carried to the winery using shallow stackable boxes.
Grapes are destemmed and gently pressed in the absence of oxygen in order to obtain a high-quality free run must. The base wine is fermented at controlled temperature. After the tirage activated with the addition of selected yeast and sugar. The second slow fermentation is made in tanks at the temperature of 16°C.
The bottle fermentation in contact with the noble lees lasts for 24 months. The wine ages in bottle for 4-6 months before being released for sale.

Apparence
Bright pale pink colour with light coppery nuances. Creamy foam, and fine perlage.

A delicate and harmonious aroma of red berries. Intense and round flavour with a refreshing and well-balanced acidity.
