Winemaking & ageing
The harvest time is determined through a careful analysis of the grade of grape and seeds ripening. The grapes are harvested by hand and carried to the winery using shallow stackable boxes, a process that thanks to the first selection of grapes guarantees a high quality. The Grapes are destemmed, gently pressed and cold macerated at the temperature of 5-7° then with the addition of selected yeasts, fermented at controlled temperature of 20-24°C. Daily pumping over are done to extract more colour and aromatic compounds from the skins.
A portion of the wine (30%) ages in old barriques for 6 months, while the remaining part ages in stainless steel tanks. -

Ruby colour with intense purplish hints.

Intense aroma of black and red berries well harmonized with delicate sweet spicy notes. Full body, juicy, silky with a long finish.
