Winemaking & ageing
The grapes are destemmed gentle pressed in absence of oxygen, then fermented at controlled temperature of 18°C. The second slow fermentation is made in stainless steel tanks (Charmat Method)
The second fermentation in tanks lasts for 6 months.
During that period, periodical batonnages are done to provide more creaminess to the wine. -
Apparence
Bright lemon colour. Creamy foam with fine perlage.

Tasting note
Intense aroma of citrus with notes of dry fruit and pastries. Fresh and round flavour with a refreshing well-balanced acidity.
