The grapes are harvested by hand and carried to the winery using shallow stackable boxes. Grapes are destemmed and gently pressed in the absence of oxygen in order to obtain a high-quality free run must. The base wine is fermented at controlled temperature. After the tirage activated with the addition of selected yeast and sugar. The second slow fermentation is made in tanks at the temperature of 16°C.
The bottle fermentation in contact with the noble lees lasts for 24 months. The wine ages in bottle for 4-6 months before being released for sale. -
Apparence
Bright yellow colour with golden glints. Creamy foam with extremely fine perlage.

Tasting note
Intense and complex aroma with refreshing citrus notes, flowers, honey, and bread crust due to the prolonged contact with the noble lees. Fresh and round flavour, well-balanced.
